Glorious weather. Absolute glorious weather.
This is what it's been like for the past few days in my part of NorCal, and the heat is just going to rise for the weekend. I've been basking in it...Taking the kids outside to play and create their own Jurassic Park...having picnics on the patio...and tending to my blooming orchids. (A vase of freshly cut flowers for my kitchen? Yes, please.)
These Razz-Apple Champagne Slushies are the perfect thing for keeping cool during this delightfully warm Spring. And, once summertime kicks in and berries are at their sweetest, you'll want to make these every day!
I chose to go with a raspberry/apple combination because of a smoothie I had at the Nugget Market juice bar. The "Patriot" was made with strawberries, raspberries, and apple juice. The perfect balance of sweetness and tartness was so refreshing. (Plus, I already love raspberries & apples anyway.)
In addition to the raspberries, I used a little bit of strawberry for color and to add to the overall berry flavor.
For a grown-up twist on a childhood favorite, I added equal parts of sparkling wine. (Yes, I always have a few Mini Sofias on hand. You never know when an occasion will call for some bubbly! Like, a Thursday...) Use any champagne or sparkling wine that you prefer, even Moscato d'Asti or Prosecco.
Mmmmmm. See, how can you not be happy when bubbles are involved?
Any time champagne or sparkling wine is mentioned, I feel the need to also reach for the St. Germain. Likewise, the elderflower liqueur pairs so naturally with the apple.
All of the ingredients are blended until smooth. Just like that, it's ready to be made into a slushie!
If you're making another batch, make sure to empty the churning bowl as much as possible (scraping the sides with a spatula or wooden spoon, not metal). Simply return the paddle and lid, then start churning again! More slushies for everyone!
Garnish each glass with more raspberries or apple slices.
This drink is so light, crisp, and refreshing. All you have to do is find the nearest lounge chair under the sun, and just sit back. Whether you are poolside or garden-side, these slushies will turn your backyard into an instant oasis. So get out there, soak up some sun, and sip on Razz-Apple Champagne Slushies!
Razz-Apple Champagne Slushie (makes 4 servings)
6 oz. Raspberries
3/4 cup Diced Strawberries
3/4 cup Diced Apples
1 1/2 cups Green Apple Italian Soda, Sparkling Apple Cider, or Apple Juice
1 1/2 cups Champagne or Sparkling Wine
1/4 cup St. Germain Elderflower Liqueur
3-4 tbsps White Granulated Sugar
- Combine all of the ingredients in a blender. Puree until smooth, then strain if desired.
- Pour into an ice cream maker, and churn until the mixture reaches the consistency of a slushie (about 10-12 minutes).
- Serve in champagne flutes, and garnish with fresh fruit! Enjoy!
